A new business at Firewheel Town Center is sure to become a favorite stop for sweet treats. Sweet Pearl’s Ice Cream opened its doors Oct. 6 with Mayor Scott LeMay on hand to join in the fun.
Will Gibson, owner of the ice cream shop, was in a serious bicycling accident and suffered multiple severe injuries including nine broken ribs and a broken shoulder.
While he was recovering, Gibson found Pearl, a rescue dog that had been abandoned, and it turned out to be a blessing for both. In addition to helping each other recover, Gibson and Pearl have formed a deep bond. Pearl even has her own title — CCO (Chief Canine Officer) of the company.
During his recovery, Gibson began making ice cream and found that it was therapeutic and served as a creative outlet. As he shared it with neighbors, demand increased and Gibson started a small company and began delivering the homemade ice cream to residents in the Inspiration Point area of Wylie. It didn’t take long for the neighborhood’s demand to become difficult to fill.
For a while, Gibson rented space at the Revolving Kitchen in Garland where he could produce larger amounts. Then later, later Alan Moses, a relative of a dedicated fan of Gibson’s homemade treat, decided to fund the move into a brick & mortar shop.
Gibson then hired pastry chef Meriel Bautista to help create new, top-notch seasonal flavors as well as more flavors to add to the menu. Currently, the flavor of the season is Pumpkin Chai. There are also 23 additional choices.
